One of my favorites….I try not to make it too often, however, because only one of my kids will eat it. Apparently, there are too many veggies involved!
Stir Fry Sauce
3 TBSP. soy sauce
1 tsp. ginger
1 garlic clove, minced (or 1 TBSP minced garlic)
1/2 tsp. spicy or flavorful oil
2 tsp. cornstarch
3 TBSP. water
Dissolve the corn starch in water. Combine all ingredients.
Stir Fry the vegetables and meats of your choice in a bit of oil in a Wok until slightly tender. Add the sauce. Bring to a boil until thickened. Spoon on top of your favorite rice.
(I always triple the recipe and add a little more soy sauce and some sweet and sour sauce while it is boiling, because I like a thinner sauce.)
To make homemade egg rolls:
Lightly beat an egg. Fill an egg roll wrap (You can find them in the fresh produce aisle of the grocery store) with shredded cabbage, crumbled sausage, or a meat of your choice, and shredded carrots or other veggies of your choice. Roll burrito style. Using a pastry brush, “seal” the edges and seams with the egg, by brushing it on like glue. Fry in a deep-fat fryer or kettle full of hot oil.
Delish!
