Grandpa J.L. Radniecki’s Pancakes

These pancakes were always made by the men in the family! Back when men didn’t do the cooking, it was a neat tradition.

I have a confession to make….last night’s supper was actually pizza.  🙂  I was busy working on my oldest son’s elementary years scrapbook (for his graduation party) and my husband was beat.  So we didn’t feel like cooking.

But on Saturday night, my husband made his great (great?) Grandpa’s pancakes.  They were so yummy that I wanted to share them!

He served these pancakes with fried eggs and fried potatoes.  He cubed the potatoes with their peelings still on, added minced garlic, peppers and onions, and fried them in a little bit of oil.  I haven’t had fried potatoes in years.  It was quite yummy!  But the pancakes were the star attraction.

These were made by the men (sons and son’s-in-laws) for family breakfasts, usually on the weekends.

2 eggs, well beaten

2 TBSP. melted butter

3 cups buttermilk

1 1/4 tsp. baking soda

2 TBSP. sugar (This ingredient was not in the original recipe.  It was added to give the cooked pancakes a more golden color.)

Add enough flour so the batter is quite thin – about 2 cups or a little less.

Combine in the order given.  Do Not use an electric mixer.  The batter can be slightly “lumpy”.  Fry on a lightly greased hot griddle (375-400 degrees).

Every year the Radniecki's would get together and make a big batch of these pancakes. But it was the MEN who did the cooking! Back then, men did not do the cooking, so it was a treat for the rest of the family.

  • 2 eggs well beaten
  • 2 tbsp melted butter
  • 3 cups buttermilk
  • 1 1/4 tsp baking soda

  • 2 cups flour Add enough flour so the batter is quite thin – it might be less than 2 cups.
